Last night while I was making dinner I thought how terrific this corner of my kitchen was looking...so here's the picture. A real kitchen portrait , it tempts the viewer...It does this viewer anyway--LOL! I couldn't wait, though, to start using some of these ingredients--small ripe tomatoes, lemon and snippets from the pretty herb bouquet. Some of the chives were about to go into bloom, so I clipped some from the kitchen garden, their Russian-like onion dome flower heads adding a shot of color and fun to the bouquet. During the spring/summer months I use fresh herbs, preferably from our garden or pots. I wish I had a few more sunny windowsills so I could grow herbs in pots indoors during the winter, but I don't. So in the warmer months I make up for it by using as many fresh herbs as possible. I cut various herbs, enough to use over 3-4 days, and put them in a glass of water and leave them on the kitchen countertop and pick at them through the week when making meals. Chives, Parsley, Rosemary, Thyme...
With some of the herbs I made this dish last night, Marinated Roasted Vegetables with Mustard-Herb Sauce. I served it up over some small cod filets for us. Lots of vegetables--soooo good! If you'd like to try this healthy recipe, go In the Kitchen.
Normally we are very healthy in our way of life, especially when it comes to food. However, while we were on vacation recently, we, well...Let's say we over-indulged a bit on all accounts, especially food! Of course, when one is on vacation one ought to treat oneself a bit...There's treating and then there's overload--LOL! We ate out quite a bit, with varying degrees of taste and price. And we were lucky to have some home-cooked dinners at my parents, which was wonderful, my Momma being a clever cook. Deliciousness of all sorts were offered us...And often dessert too. How does one say no to a homemade, made-by-mom-with-love dessert??!! Impossible! So, now we're home again, and we're trying to shape up! Hence, the super-healthy recipe shown today.
Our Charlie is actually on something of a diet himself. He's on special food just now to slim off a couple of extra pounds. (Overweight pets can develop just as many health issues as humans can.)...The food does seem to be helping...Which is good, because as you can see, he loves to lounge around. Here he was Sunday evening, before it started raining, after taking one of his "dirt baths" in the rock garden!
The rock garden was something we started last summer. At first we were going to make this a water feature, a water garden, but due to some difficulties with doing it how we wanted, we opted to make this into a rock/plant garden. The large rock was already there when we bought the property, so why not make it part of a garden, we thought. It all looks a bit skimpy now, but in the next year or so we hope to work on it more with more interesting planting. We have other rocks in it already, as well as some large pieces of driftwood, irises, creeping pine and lupine. The white disk-looking thing to the right in the rock garden is a birdbath (adds a little bit of water to the garden)...And with Charlie right there maybe that's also why we don't have too many birds visiting our garden! *SIGH*
