Spiced Apple Breakfast Puff

A variation on the pancake, this baked breakfast puff has the taste of apple pie! Serve with maple syrup & enjoy!

Spiced Apple Breakfast Puff --4 servings

2 Tblsp butter
2 Granny Smith apples, peeled, cored & sliced thin
1/4 cup sugar
1 tsp pumpkin pie spice or ground cinnamon
1/3 cup raisins
1/2 cup all-purpose flour
Good pinch of salt
1/2 cup milk
2 eggs
Maple syrup to serve

Preheat oven to 375 degrees F/180 degrees C. Butter the bottom & half way up the sides of a 9-inch round cake pan.

In a skillet, melt the butter. Add apples, sugar, pumpkin pie spice (or cinnamon) and raisins. Saute apples until they begin to soften, about 5 minutes. Pour apple mixture into prepared cake pan.

In a bowl, beat the eggs. Add milk, salt & flour. Pour batter over apple-raisin mix. Bake for 30 minutes, or until breakfast puff tests done in the center.
