London Memories Salad

To tell the truth I have no real written recipe for this salad. I just make it up! I is based on a dish I had when Dear Husband and I were in London, England some years ago. I make variations of it, and play around with ingredients for the salad and dressing. This is a basic recipe to start with--add what you like or substract what you don't! Makes a great summer salad for warm days and taking on picnics!

Cooked bulgur wheat (cracked wheat)--about 1/2 cup grain cooked in 1 cup water, and cooled
Two large, ripe tomatoes, seeded and diced
1 cup diced cucumber
1/2 cup corn kernels
1/2 small red onion, diced
1/4 cup black olive slices
1 cup kidney beans (from a tin, rinsed and drained)
1 cup cubed feta cheese
2 Tblsp fresh, fine chopped parsely or coriander

Dressing: 1/4 cup extra virgin olive oil, juice of 1/2 a lemon, 1/2 clove garlic--grated, 1 to 2 tsp Dijon mustard, 1 tsp ground cumin, 1/2 tsp ground coriander, fresh ground sea salt and black pepper.

Mix together salad ingredients in a large bowl. Whisk together the dressing ingredients in a small bowl or cup, then pour over salad. Toss to coat. Serve right away or chill until serving.
